Chocolate Dipped Strawberry Sandwich Cookies

If you’re a fan of chocolate dipped strawberries, you’ll do flips for these brownie sandwich cookies with fresh strawberry buttercream, dipped in melted chocolate! Perfection in a dessert!

Cookies:
1 brownie mix (18 oz.) I used Duncan Hines
1 tsp. vanilla extract
1/4 c. all-purpose flour ( plus 1 or 2 Tbsp., if necessary )
1/2 cup ( 1 cube butter, softened )
1 large egg
Strawberry Buttercream:
4 c. powdered sugar
1/4 c. plus 2 Tbsp. mashed strawberries (I didn't want to puree because I wanted small pieces)
1/2 tsp. almond extract
1/2 c. butter ( softened )
Dip:
1 c. chocolate chips, melted (or your favorite dipping chocolate), you may need to thin it with a little shortening, I didn't end up thinning it

1 T sugar
