Chopped Fiesta Taco Salad with Homemade Catalina Dressing

An easy chopped summer salad - no oven required!

For the dressing:

1/2 a small onion, halved
1/4 cup ketchup
2 Tablespoons red wine vinegar
1 1/2 teaspoons honey
1 1/2 teaspoons dark brown sugar
3/4 teaspoon Worcestershire sauce
1/2 teaspoon paprika
1/8 teaspoon pepper
1/3-1/2 cup olive oil
For the salad:
1/2 pound ground meat (or 1 cup cooked)
1 Tablespoon homemade taco seasoning
1 heaping teaspoon flour
3 Tablespoons water
1 small/medium bunch green leaf lettuce, chopped (or whatever kind you prefer)
1 cup shredded Mexican blend cheese
1/2 - 1 bell pepper, diced
3 Roma tomatoes, seeded and diced
1 can black beans (15 ounces), drained and rinsed
1/4 cup sliced black olives
1 cup crushed Doritos (or more if you want to be less healthy!)
