Cilantro Lime Shredded Chicken Tacos

A zesty mix-up to your standard taco recipe!

1.5 lbs. boneless skinless chicken breast
1 can Original Rotel
1- 11 oz. can tomatillos
2 Tablespoons chili powder
1.5 teaspoons cumin
6 sprigs of cilantro (chopped)
A dash of cayenne pepper
1 lime
Salt and pepper to taste
Whole wheat tortillas
Your favorite taco toppings
1. Place chicken breast in the crock pot with the Rotel, spices, tomatillos and cilantro. 2. Roll the lime on your counter. Cut in halves or quarters and squeeze juice onto chicken. 3. Place lime rinds on top of the chicken. 4. Cook on medium heat for 8-10 hours. 5. When meat is tender, remove the lime rinds. Using a fork, shred the chicken. Add salt and pepper if desired. Mix well. 6. Cover and continue cooking on medium heat for 30 minutes. 7. Build tacos using your favorite toppings: tomato, lettuce, cheese, sour cream, rice, etc. 8. Enjoy!
