2 celery ribs, diced
1 medium onion, chopped
12 tablespoons butter
3/4 cup all-purpose flour
1 teaspoon salt
2 teaspoons curry powder (or more for stronger flavor)
2 12 ounce cans evaporated milk
1 13.5 ounce can coconut milk
8 ounces heavy cream
2 cups cooked chicken, cubed
