Coconut Orange Rice

This little concoction has all the flavors I long for. The tangy orange, hint of sweet coconut and the salty and nutty cashews.

1+1/2 tablespoons olive oil
1+1/2 cups white rice uncooked
1 can (14 ounce) coconut milk*
1/3 cup orange juice
1/3 cup water
1 teaspoon salt
2 tablespoons butter
3/4 cup roasted cashews chopped
1 mandarian orange segments divided
