Cold Beetroot Soup

Cold beetroot soup also known as Lithuanian borsch , traditionally served with hot boiled or fried potatoes.

2 medium beetroots (boiled)
5 medium cucumbers
4 eggs (hard boiled)
6 cups kefir
4 tablespoons sour cream
1/2 cup drinking water
1 bunch dill
1 bunch green onion
1/2 tablespoon sugar
1 teaspoon salt

Grate the cucumbers, eggs and beetroots on a coarse grater. Chop the onion and dill. Put all the ingredients in a large pot. Pour in the kefir and add sour cream. Mix all well. Add salt, sugar and...
