Cornmeal Dusted Muffin Bread

A light and fluffy loaf bread perfect as a side or sandwich!

1 Tablespoon yeast
1/3 cup warm water
3 cups all purpose flour
2 Tablespoons. granulated sugar
1 and 1/2 teaspoons salt
1/4 teaspoon. baking soda
1 cup coconut milk
2 tablespoons olive oil
Cornmeal, to dust the pan
1. Mix the yeast and water together in a large bowl. 2. In a separate bowl, sift your flour and mix in the sugar, salt and baking soda. 3. Whisk together the coconut milk and oil. Heat until warm in the microwave. 4. Blend the coconut milk mixture into the yeast mixture using a hand mixer. Add the dry ingredients and mix until combined. The batter will be wet and sticky. 5. Preheat the oven to 400 degrees Fahrenheit. Grease a loaf pan and sprinkle all sides with cornmeal. 6. Pour the dough into the pan. Cover loosely with a towel and allow to rise for about an hour in a warm place. The dough should rise to about 1/4 inch above the pan. 7. Bake for 24 minutes. About halfway through, cover the bread loosely with tin foil and continue baking. 8. Remove from the pan immediately and cool on a wire rack. 9. Enjoy!
