Craisin Walnut Granola

Crunchy and tasty, we make a new batch as soon the other is gone. So much fresher and flavorful than the store bought options, and a cinch to make! I packaged it up in cellophane bags to give to the neighbors for Christmas.

4 cups regular oats (not quick), uncooked
1 cup sweetened, flaked coconut
1/2 cup wheat germ (can use milled flax seed to make gluten-free)
1 cup coarsely chopped walnuts
1/2 cup salted sunflower seeds
1 cup craisins
Syrup:
2/3 cup water
1 cup brown sugar
1 teaspoon salt
2/3 cup oil
2 teaspoons vanilla
1 cup sweetened, flaked coconut

1/2 cup salted sunflower seeds
1 cup craisins
Syrup:
2/3 cup water
1 cup brown sugar
1 teaspoon salt
2/3 cup oil
2 teaspoons vanilla
Combine oats, coconut, wheat germ, walnuts, sunflower seeds and craisins in a large bowl. Set aside. For the syrup: heat water, brown sugar and salt together in a glass bowl in the microwave until boiling, about one minute. Stir oil and vanilla into sugar-water mixture. Pour over dry ingredients and mix thoroughly. Spread onto a half sheet (13" x 18") pan with edges, lined with parchment paper or a silpat. Bake at 300 degrees for 35 to 45 minutes, or until granola is lightly toasted and brown on the edges.
