Creamy Chicken Florentine

This is a flavorful, easy to make chicken, pasta & cheese dish with just the right amount of creaminess!

1 1/2 lbs. boneless chicken breasts, cubed
2 tsp. oil
1 tsp. jarred diced garlic
1 tsp. "Greek" seasoning
1/2 tsp. "Soul Food" seasoning
1 cup chicken broth
10 oz. bag frozen spinach - thawed & well drained
1 can "Italian" style diced tomatoes, undrained
1 cup sour cream
2 1/2 cups shredded mozzarella cheese
1 lb. dry penne pasta
Preheat oven to 375º. Boil pasta according to package directions to al dente. Drain pasta & set aside. In a large skillet over medium high heat, saute` chicken in oil along with garlic & both seasonings. Mix in broth, soup, sour cream, tomatoes with juice, spinach & 1 1/2 cups of the cheese. Heat on low til hot through. In a greased 9 x 13 baking dish, gently blend the drained pasta with the chicken mixture. Top with remaining cheese. Bake uncovered for 20 minutes.
