A secretly healthy "cream" makes this pasta dish irresistibly creamy and low-calorie. Plus minimal ingredients and quick prep-time

3 small sweet potatoes (just under 3 cups), cubed into small pieces
8 ounces (half a bag) egg noodles
1 cup frozen corn
½ cup mushrooms, chopped
2 cans (10.5 oz.) reduced-fat cream of mushroom soup
½ cup unsweetened almond breeze, can sub another milk
½ cup 2% plain Greek yogurt, can sub low-fat sour cream
