This Creamy Vegan Sundried Tomato Pesto Pasta is just as rich and indulgent as the real thing and infinitely healthier.

2 portions of pasta (gluten-free if necessary)
For the pesto:
8 sundried tomatoes
Handful of fresh basil
1 clove of garlic
Juice of 1/2 lemon
2 tablespoons pine nuts
Salt + pepper, to taste
Optional: pinch of cayenne chilli pepper, to taste
Optional: 1 tablespoon nutritional yeast
To make it creamy:
2 tablespoons cornflour
Splash of cold water
1 cup milk of choice I recommend unsweetened almond milk
