My mother’s creation! This dish is easy to digest and can nourish the blood. It can strengthen human body, and give people smooth skin and rosy cheeks! It is especially good for ladies and recovering patients. Chinese cuisine has been using eggs, dates and peanuts as blood nourishing tonics. My mother initially adds the salty and sour preserved plums to the traditionally purely sweet dish. This gives the dish richer flavours. 4 eggs
5 oz. Chinese dates (15-20 large ones)
4 oz. peanuts, shelled
1 1/4 oz. plums (preserved, 15 pieces)
1/2 oz. ginger
2 T. sugar crystals
1 1/2 T. soy sauce (light)
3 T. vinegar
Boil the eggs until they are well done and shell them. Blanch the peanuts and dates for 5 minutes, so as to remove their raw smell. Finely slice the ginger. Put the preserved plums, ginger, sugar crystals, soy sauce and vinegar into a pot of water to make a sauce. Boil the eggs, dates and peanuts in the sauce for 20 minutes. Turn off the heat and leave the eggs, dates and peanuts immersed in the sauce of 2 hours, thus they can sufficiently absorb the flavourings. Boil the stew again with strong heat, until the sauce thickens.
