Crispy Pizza Rolls


Different shaped pizza that will blow up your mind!

For one pizza roll:
7 filo pastry sheets
2 onions (chopped)
2 1/2 cups mushrooms (fresh, sliced)
2 cups chicken (cooked, shredded)
3 tablespoons sour cream
3 tablespoons tomato sauce (or ketchup)
2 cups white cheese (grated)
1 egg
1/8 cup oil
1/4 cup mineral water (sparkling)
to taste salt and pepper
to taste oregano
1 tablespoon parsley
4 tablespoons oil for frying
1. Heat 2 tbsp oil over medium heat and cook onions until soft and tender. Add mushrooms and cook until the liquid from the mushrooms vapours. Add parsley and remove from heat. 2. Heat the remaining 2tbsp oil and fry chicken for a couple of minutes, until it gets a crispy crust. 3. Beat the egg and combine with cheese. 4. Combine 1/8 cup oil with mineral water. 5. Preheat oven to 180 degrees and start arranging the roll: - place one filo sheet and sprinkle with 1/4 oil-water mixture; - place the 2nd filo sheet over the 1st and sprinkle with another 1/4 oil-water mixture; - place the 3rd filo sheet and spread 1/2 mushrooms mixture; - 4th filo sheet, 1/4 oil-water mixture and fried chicken; - 5th filo sheet , last 1/4 oil-water mixture and spread tomato sauce and sprinkle some oregano; - 6th filo sheet and spread sour cream; - the last filo sheet, spread the egg-and-cheese mixture and the remaining mushrooms mixture. Roll the sheets and place into a baking pan brushed with some oil. Bake for about 40 minutes. 6. Let it cool for 5 minutes and cut into pieces at your convenience. Serve with yogurt, sour cream or fresh salad. Note: Instead of chicken, you can use same quantity of ham.
