Crustless Vegetable Quiche

This is a lovely quiche that you can adapt to your particular tastes by changing up the vegetables. Plus, since there is not a crust, it is healthier.

12 eggs
3 Tbsp Water
1 Tomato, chopped
1 cup broccoli florets, finely chopped
3 green onions, sliced thin
4 oz green chilies, chopped
1 red pepper, finely chopped
1 cup cheddar cheese, shredded
Salt and Pepper to taste
Beat the eggs and water together until well combined and smooth. Add all of the other ingredients and mix well. Pour into a greased 9 inch deep dish pie plate. Bake at 350 degrees for about 40 minutes....
