Cuban Black Beans and Rice

Classic Cuban black beans and rice dish called Moros Y Cristianos in Spanish. A perfect side dish!

½ lb (225g) dried black beans
1 medium onion, diced
2 garlic cloves, crushed with the back of a knife
1 green bell pepper, diced
1 dried bay leaf
2 cups uncooked rice
2 tablespoons olive oil
¼ lb (100g) bacon, diced
1 cup onion, finely chopped
1 cup green bell pepper, minced
1 teaspoon ground cumin
1 teaspoon dried oregano
1 bay leaf
1 tablespoon white wine vinegar
2 teaspoons salt
Soak the beans in cold water overnight. Drain and place in a pot with 2½ quarts (litres) of fresh water. Add the onion, garlic, green bell pepper and bay leaf. Bring to a boil, reduce the heat and simmer...
