Delicious Cilantro lime rice

When Mexican Night comes around I like to whip up a quick rice side dish (for myself of course) and Cilantro Lime Rice is one of my favorites because it is light and refreshing. The lemon juice makes it refreshing with a little bit of zing to it and the cilantro is amazing.

The Cast Of Cilantro Lime Rice
3 cups of hot cooked rice, long grain doesn’t get mushy but you can use Minute Rice
1/2 cup of chopped fresh cilantro
The juice from 2 small or 1 large limes
The zest from one lime
Salt to taste
1. Cook rice according to directions 2. Fluff your rice and add lime juice, lime zest, cilantro and salt. Stir well and serve warm.
