Here’s a delicious and easy-to-make lemon bar recipe.

For the crust

1 1/3 cup oat flour
¼ cup coconut oil
2-3 tablespoons plant-based milk of your choice
Sweetener of your choice to taste (If you use a liquid sweetener you may need less milk)
Cinnamon – optional
For the filling

3 eggs
1 egg yolk – optional
1/3 cup desiccated coconut
¼ cup sweetener of your choice
2 lemons
2 tablespoons nut butter of your choice
Powdered sugar for decoration – optional
