Deliciously Healthy Profiteroles

They taste so good, it’s hard to believe that everything used to make them is healthy, nutritious and full of goodness. A tip for when you’re making these is not to worry if the pastry mixture doesn’t thicken straight away. If you find it’s still runny you can just pop it back in the pan and reheat (stirring constantly) until you get the desired stiff paste.

For the profiterole pastry:
1/4 cup/50g unrefined coconut oil
1/2 cup/120ml canned coconut milk
pinch salt
1/2 cup/65g arrowroot starch
2 large eggs

For the coconut cream:
1 can or packet coconut milk left in the fridge for at least 24 hours (see my notes above for which brands to buy for this recipe)
3 tablespoons maple syrup
1 tablespoon vanilla extract

For the chocolate ganache:
1/2 cup/170g honey
1/4 cup/30g cacao powder
2 tbsp coconut oil
