Dinner Spinach Salad

I came up with this salad one night when we wanted more than "just a salad". It turned out delicious!

1 large sweet onion
2-3 tablespoons butter
1/2 teaspoon sugar
10-12 oz package spinach leaves
1 can Northern beans, drained and rinsed
1 roasted bell pepper, cut into strips
4-8 oz feta cheese, crumbled
1/2 cup toasted slivered almonds
1 can mandarin oranges, drained (save the juice)
Dressing:
Juice from mandarin oranges
1 teaspoon mustard
1/2 teaspoon sugar
1/2 teaspoon roasted garlic seasoning (optional)
1/3 cup rice vinegar
3/4 teaspoon Montreal Steak seasoning
1/2 teaspoon Emeril's seasoning
