Dirty rice , a Cajun favorite, contains white rice is mixed with diced up chicken livers or gizzards, which is the “dirty” part of the rice, along with sautéed onions, celery and bell peppers and usually sausage. Below is my recipe for a delicious dirty rice that is made with onion, celery, bell pepper, garlic, ground pork, ground beef, chicken livers, rice, chicken broth, vegetable broth, cayenne and other seasonings and herbs.

2 3/4 cups of vegetable broth
1 1/2 teaspoons of salt
1 1/2 cups of long grain rice
2 tablespoons canola oil
1 small onion, diced
2 celery stalks, diced
1 green bell pepper, diced
2 garlic cloves, minced
1/2 pound of ground pork
1/2 pound of ground beef
1/2 cup chicken livers (about 4 ounces), diced
1 tablespoon dried oregano
1 teaspoons of salt
1/4 teaspoon of ground black pepper
1/2 teaspoon chili powder
1/8 teaspoon of cayenne pepper
1 1/2 cups chicken broth
1/2 bunch scallions (white and green parts only), chopped
2 tablespoons of parsley, chopped

Marinated Taro Root

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
