Don't Peek Chicken & Wild Rice

A tasty meal that is easy to prepare and cooks itself.... what more could you ask for?

1 box Uncle Ben's Original Recipe Long Grain Wild Rice (quick cook does Not work in this recipe!)
1 can low sodium cream of mushroom soup
1 can low sodium cream of celery soup
1 can (14.5 oz.) low sodium chicken broth
1 can water
1 1/2 lbs. chicken breasts or tenders, (you can cut into chunks for faster cooking if you wish)
4 Tablespoons butter, cut into small chunks
In a greased 9 x 13 pan, mix the box of Uncle Ben's Original Recipe Long Grain & Wild Rice along with seasonings, cansof low sodium celery soup and low sodium mushroom soup, can of low sodium chicken broth & one can of water. Arrange the raw cubed chicken on top of the rice mixture. Sprinkle with fajita seasoning to taste. Dot with 4 Tablespoons butter, cut into small chunks. Cover and seal with foil. Bake at 325 degrees for 1 1/2 hours and "Don't Peek!" **Please check to make sure the chicken is cooked through!** Your house will smell amazing! NOTES: 1. I made this the first time without the low sodium ingredients and it was Way too salty! I think the Uncle Ben's has plenty in it itself. 2. If the rice hasn't absorbed enough moisture after the 90 minutes, stir gently and re-cover. Turn oven OFF. Place covered pan back in hot but Off oven for an additional 15 - 20 minutes.
