I love cabbage, fried, baked, made into sauerkraut. I love trying different sauerkraut recipes, this is one of many I have made.

3 strips bacon
1 cup finely chopped onion
2 pounds sauerkraut
2 Tablespoons brown sugar
1 12 oz beer or 12 oz apple cider
salt and pepper
3/4 cup grated carrots
1 Tablespoon parsley, chopped
1 cup finely chopped onion
2 pounds sauerkraut
2 Tablespoons brown sugar
1 12 oz beer or 12 oz apple cider
salt and pepper
3/4 cup grated carrots
1 Tablespoon parsley, chopped
Cook bacon in a large frying pan, then add onion, cook until translucent. Add sauerkraut, brown sugar, beer or cider and salt and pepper. Cook for 1 hour, then add carrot and cook for 1/2 hour or more. Garnish with chopped parsley.
