Cooking is a family affair here at Three Guys Outside. I was washing the dishes after dinner one night when my 9-year old approached me and said, “Dad, I have an idea. Wouldn’t it be good if we smoked mac and cheese? And put bacon in it?” And here we are, smoked mac and cheese!

My wife keeps telling me “Why go out to eat when we can make it better here at home?” So a few nights ago we were in the mood for something really good with lots of flavor and landed on an Island Rice Bowl with a fantastic peanut sauce. We used zucchini, carrot, onion, sugar peas and broccoli, but you can choose what ever vegetables are your own personal favorite. Add grilled chicken (we did), steak or shrimp. Omit meat for a wonderful vegetarian dish. Top it all off with sauce.

One that I really enjoy is from the Halal trucks with delicious chicken and flavorful rice. This wonderful dish will take you right back to the corner of Broadway and 22nd, I promise!

½ cup Greek yogurt
1 tablespoon sugar
2 tablespoons white vinegar
1 teaspoon lemon juice
