Dutch Oven Baked Ziti

Whether you are camping with the scouts, chilling with the family or in the back yard with friends, baked ziti is a comfort dish that always gets rave reviews. It is kind of a one pot “add what ever you like” kind of dish. A BIG shout out to my good friend Mark Kapp for the great picture and wonderful dish.

1 lb. bulk Italian sausage
Green Peppers ( diced )
Onion ( diced )
Mushrooms ( sliced )

When the weather turns cold I love to put on a pot of soup. Just the smell of a simmering soup warms the soul and brightens the spirits. I love chicken wings! I wish that chickens had six or eight wings just so that I could have more of them to eat. I love them fried, baked and now I love them smoked. They are tender, smokey, spicy and wonderful. Add some blue cheese dressing and wings cannot be beat!

Once I had made my own Smoked Pastrami it just seemed natural to make pastrami burgers. The pastrami has so much flavor that you really don’t need much seasoning in the burgers. They make such a great combination.

Last year I got the urge to eat a little more healthy and jumped on the Whole 30 bandwagon. After 30 days, I’d lost 20lbs and felt great. It is always fun when you are camping to pull a Bundt cake out of a Dutch Oven. People are accustomed to seeing a cobbler or a cake, but a Bundt cake can be very impressive. We are a long-way from the South but I LOVE making this dish when we go camping. It has a great combination of sweet and heat. It is awesome for dinner and then the leftovers can be put in a cooler and placed in a tortilla the next day for a Cajun Wrap. So easy to make-up ahead of time to take with you. I think you will LOVE it as well.

1/3 cup honey
3 T. water
3 T. prepared mustard
2 T. melted butter
2-3 tsp. Cajun seasoning
2-3 tsp. curry seasoning
1 tsp. lemon juice
1 clove garlic ( minced )
6 boneless skinless chicken breasts (great with

Sometimes you want to do something a little more fancy and special for Mother’s Day. If you asked my wife, on almost any special occasion what she would like, it would be Filet Oscar. Steak by itself is wonderful, but when you top it with asparagus, crab meat and Bearnaise Sauce it becomes absolutely gourmet.
