This easy Tomato Pie is the most delicious way to enjoy fresh seasonal produce! Best of all, it only takes about 15 minutes to prepare this fancy side dish that’s perfect alongside grilled meat or seafood, or equally tasty as a vegetarian main course option.

4 eggs
1 cup baking mix (such as Bisquick)*
½ cup grated Parmesan cheese (I use the powdered kind in the can)
½ cup shredded Cheddar cheese
1 small sweet onion, diced
3 cups thinly-sliced grape or cherry tomatoes
