Easy baller summer salad

This salad is sweet and zingy, combining fruit and veg - the perfect addition to you summer bbq party! It is tasty, nutritious and fun to make too!

For the dressing

150 g mozzarella pearls 1 tablespoon finely chopped fresh mint

1 avocado 2 tablespoons good vegetable oil

1 papaya, seeds removed 3 tablespoons lemon juice

1/2 cantaloupe, seeds removed zest of 1 lemon

A piece of cucumber (about 20 cm long)

Salt and pepper to taste
