EASY EGG SALAD WITH FRESH SWEET APRICOTS

This crunchy salad has a hearty and slightly sweet taste. The lovely apricots pair well with fresh cucumbers, red bell peppers and the wonderful aroma of fresh basil and scapes. The salad becomes creamy when combined with mashed boiled eggs and extra virgin olive oil. This quick recipe is always a favorite as a light lunch, picnic idea or great side dish for a garden party or barbecue.

6 or 8 hard-boiled eggs
1 large cucumber, peeled and chopped
1 red bell pepper, chopped
3 or 4 fresh apricots, pitted and chopped
5 large fresh basil leaves, shredded
2 garlic scape, chopped
2 tablespoons extra virgin olive oil
