Easy Gluten Free Pumpkin Pie

Easy gluten free pumpkin pie for Thanksgiving. Gluten free oat flour, Greek yogurt, and pumpkin create a rich, creamy pie.

1 1/2 cups oat flour
1/2 teaspoons salt
1/2 teaspoon xantham gum
1/2 cup frozen butter
1/4 cup iced water
3/4 cup sugar
1 tablespoon arrowroot starch
2 teaspoons cinnamon
1/4 teaspoon nutmeg
3/4 teaspoon ground ginger
1/4 teaspoon salt
16 oz pureed pumpkin (not pumpkin pie mix)
3/4 cup almond milk
1/2 cup greek yogurt
3 eggs
