Easy Homemade Manicotti

These homemade noodles are so much better than the store-bought variety...and they are easy to make too!

"Noodles" - essentially a savory crepe
3 eggs, lightly beaten
1 1/3 cups milk
2 tablespoons butter, melted
1 cup all-purpose flour
1/2 teaspoon salt
Filling:
1 small container Ricotta cheese
1/4 cup Parmesan cheese
1 egg
1 tsp dried parsley
Optional: 1/2 cup diced mushrooms, 2 Italian sausages or ground beef {cooked & crumbled}
Topping:
1 can diced tomatoes
1 can/ jar tomato sauce
1 cup mozzarella cheese
