Easy Mexican Pozole

My take on the classic mexican pozole. Made easy but packed all the delicious mexican flavors. Stack your favorite veggies high, dig in and enjoy!

Ingredients
1 lb pork, cut into cubes
1 tbsp. extra virgin olive oil
1 tsp. kosher salt
1 tsp. black pepper
1 tsp. cumin
32 oz. chicken stock
1 medium can, red enchilada sauce
2 medium cans hominy, rinsed and drained
1 can black beans, rinsed and drained
Soup Fixins
1 small head of cabbage, cut into small ribbons
1 jalapeno, sliced
1-2 avocados, cubed
1 green bell pepper, chopped
1 onion, chopped
1/2 cup cilantro, roughly chopped
plain greek yogurt, for garnish
