{Easy} Pho

Pho, a Vietnamese noodle soup, is one of my favorites! I've attempted making it in the past but it is a bit time consuming as you boil a whole chicken and it requires ingredients that I don't normally have on hand. This recipe is essentially a cheater's version, it may not be as authentic but it is so quick to whip together and still tastes amazing!

1 tbsp sesame oil
4 bok choy leaves, chopped (separate white and green pieces)
2 carrots, peeled and thinly sliced
2 cloves garlic, minced
1 Tbs minced fresh ginger
7 cups chicken broth
2 Tbs soy sauce
2 Tbs rice vinegar
½ C green onions, sliced
1 8 oz package rice noodles (about the width of linguine)
1-2 chicken breasts
1 Tbs olive oil
Optional condiments: Hoisin Sauce, Sriracha Sauce, Fish sauce, soy sauce, lime wedges/lime juice, bean sprouts, thai basil, cilantro
