2 Minute® Ready to Serve Rice cups
½ cup frozen shelled edamame
½ cup red bell pepper, diced
½ cup shredded carrots
2 scallions, thinly sliced
Juice of 1 lime
1 tablespoon reduced-sodium soy sauce
1 tablespoon rice wine vinegar (may substitute any light-colored vinegar)
2 teaspoons toasted sesame oil
1 teaspoon sriracha (add more if you like spicy food)
