Enchilada Style Stuffed Peppers

An old stand by gets a tasty twist. A cross between an enchilada and a classic stuffed pepper. Sure to get you out of your dinner rut!

Brown Rice (prepare according to box instructions for 2 cups of cooked rice)

4 red peppers

1 lb ground pork

1/2 sweet onion, diced

1 can black beans (drained and rinsed)

1 can (the small one in the taco section) of diced green chiles

chopped cilantro (about 1/4 C chopped)

1 1/2 C Cheddar Jack cheese (or use just cheddar)

1 large can red enchilada sauce

salt and pepper (about 1/4 tsp each, or to your liking)
