Enchilada Wrap Supreme

I decided, rather than trying to duplicate the oh-so-amazing crunch wrap, why not just use it as inspiration! I have a new favorite enchilada recipe using Chicken Tinga. This makes one great enchilada! Then add a little Spanish Rice, some cheese, a tostada and a tortilla and you have the perfect Enchilada Wrap Supreme!

2 chicken breasts, cooked and shredded
1 TBS oil
1/4 of a purple onion, chopped
1/2 can (15 oz can) crushed tomatoes
1/2 can (7 oz can) chipotle peppers in adobo sauce
1/2 cup chicken broth
1 can cream chicken soup
1/2 cup sour cream

2 cups shredded cheddar cheese
3 cups Spanish Rice
10 extra-large tortillas
10 tostada shells
