These protein packed mini energy balls make a perfect grab and go snack. They’re really easy to make and such a convenient healthy breakfast or snack. You can substitute the cranberries for raisins and add any type of seeds you like and they’ll still taste great. Store in an air tight container, in the fridge for up to 1 week.

½ cup cashew nut butter
¼ cup honey
1 tbsp. chia seeds
? cup dried cranberries
3 tbsp. pumpkin seeds

Preheat the oven to 175C.
Bake the oats, almonds and coconut for 8-10 minutes, stirring after 5 minutes then leave to cool.
