All of the flavors of your favorite Bacon-Egg-and-Cheese sandwich from the drive-thru, in one easy make-ahead dish. The perfect addition to any brunch table!

½ lb. bacon, chopped (bulk pork sausage would also work well)
¼ cup diced mushrooms
¼ cup diced onion
3 English muffins, cubed into 1-inch pieces
1 ½ cups grated cheddar cheese
5 eggs
1 cup half-and-half
