Inspired by the esquites found at Tacombi at Fonda Nolita in Manhattan. Sweet grilled corn mixed with lime, jalapeno, chipotle mayo and Mexican Fresca cheese.

4-5 ears of fresh corn, removed from the cob
1 tsp. vegetable oil
1 jalapeño, seeded and diced
½ cup chipotle mayo (I used Kraft Sandwich Shop Chipotle Mayo)
1 tsp. garlic, minced
2 tsp. Kosher Salt
4-5 ears of fresh corn, removed from the cob
½ cup Mexican Fresca cheese or feta cheese, crumbled
2 limes, one cut in half for juicing and one cut into wedges;
A dash of cayenne pepper, if desired.
