Fantastic Fried Rice

This tastes better than takeout and the colors are wonderful!

2 cups chicken stock
1 cups basmati rice
3 tablespoons vegetable oil
2 eggs, beaten
2 cloves garlic, minced
2 inches fresh ginger, minced
1/2 cup carrots, shredded
1 small red bell pepper, diced
4 green onions, thinly sliced on an angle
1/2 cup frozen peas
1/3 cup soy sauce
