Flourless Sunbutter Muffins + Parfait

A delicious, easy and nutritious breakfast to get your day going. Full of protein, healthy fats and carbs that will keep you full and energized.

Muffins:

1 medium ripe banana
1 egg
1/2 cup no sugar added sunbutter
2 tbsp pure maple syrup
1 tsp vanilla extract
1/4 tsp baking soda
1/3 cup dark chocolate chips (I chopped up a dark chocolate bar)

Parfait:

1 sunbutter muffin, cut up into bite sized pieces (I cut mine in thirds, and then cut that into thirds)
1/2 cup plain or vanilla greek yogurt (I used plain)
1/3 cup raspberries, fresh or frozen
1 tbsp no sugar added sunbutter
