Freezer Calzones

I tweaked Ree Drummond's method for calzones to fit our family's tastes. These are super easy, fill up the freezer, and taste great!

1 bag frozen bread dough (loaf style OR rolls. I use Rhodes brand bread dough and use 4 loafs); thawed and risen.
2 pkg (16oz) ricotta cheese
2 eggs
2 c shredded mozzarella cheese
1/2 c grated parmesan cheese
1 pkg Boar's Head pepperoni (or what brand you prefer)
1/2 lb ground beef
1 tsp basil divided
2 tsp dried parsley divided

1. brown and drain ground beef
2. set up 2 bowls and add 1 egg and ricotta per bowl. make one bowl your cheese/beef/seasoning mixture. the other bowl is just a mixture of the cheeses. we are making 2 flavors of calzones!
3. break each loaf into 4 pieces. flour your surface and roll out. add 1 scoop (3-4 tbsp) of the beef~cheese mixture. fold over and run a fork along the half-circle. place on baking sheet. do this with 2 of the loafs.
4. on the remaining 2 loafs, add the cheese mixture and top with 6 slices of pepperoni, fold over, seal, place on baking sheet.
5. flash freeze and place in freezer bags.
6. to use, bake at 375 for 15 minutes (yep, use frozen). serve with marinara on the side for dipping.
