Galatópita-Greek milk custard pie with lemons and pistachios

A gluten free version of a traditional Greek dessert. Silky,scrumptious yet easy to make!

1.5 quart (1.5 liters) milk
5.2 oz (150 grams) gluten free multi-purpose flour (I used King Arthur measure for measure gf flour)
1 cup pistachios (finely grounded ,peeled and raw if possible)
7 oz (200 grams) granulated sugar
1 egg,room temperature
2 teaspoons vanilla extract
zest from 3 lemons*
1 tablespoon butter
Topping:

powdered sugar to dust on top
chopped pistachios
lemon zest(optional but refreshing addition)
