Gluten Dairy Free Sausage Gravy

This is made without any flour and it is very easy. Please give it a try even if it doesn't sound good to you right off the bat. If you are eating gluten free and/or dairy free this is a great comfort food.

One can white beans or 15oz cooked dried beans
turkey breakfast sausage
1/2 stick margarine or butter alternative (optional)
1/3 cup water
1/3 cup vegetable oil
crushed red pepper
sage
salt and pepper
Get your turkey breakfast sausage in a skillet to start it browning. While that is cooking put a can of white beans into your food processor or personal blender like I have Add your seasonings to the beans before pureeing. Add the water and oil also. Blend until creamy smooth. Continue to break up and brown the sausage and add the 1/2 stick of butter to the skillet with the sausage. Blend the beans again just to be sure they are nice and creamy. I like to taste them before pouring into the skillet. This way you can add more seasonings or water as you feel is needed for taste and texture Now, add your puree to the skillet. Stir, stir, stir. It takes a bit of patient stirring or the oil will be hanging around the edges of the skillet. Stir until the oil has been emulsed into the gravy. Enjoy over gluten free biscuits for breakfast or over some rice for supper. Yum
