These gluten free muffins are made with oat flour, almond and butter and topped with coconut. Quick, easy and healthy!

1/2 cup rolled oats
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon ground ginger
1 cup unsweetened coconut flakes, plus more for topping if desired
1/4 cup natural almond butter
1/4 cup unsweetened apple sauce, plus 2 tablespoons
1/2 teaspoon pure vanilla extract
1/2 teaspoon pure almond extract
1/2 teaspoon apple cider vinegar
1 large egg white
