Gluten-free Blueberry Muffin Peach Cobbler

This healthy and delicious dessert takes to classic recipes and combines them in one!

Cobbler:
1 cup gluten-free all purpose flour
1/2 cup coconut sugar
2 tsp. baking powder
1/8 tsp. cinnamon
1 egg, beaten (or flax egg for vegan option)
1/3 cup almond milk
2 Tbsp. coconut oil, melted
1/4 tsp. vanilla extract
1 cup blueberries
Peaches:
6 cups sliced peaches (about 8 peaches peeled)
3 Tbsp. coconut sugar
1/2 tsp. cinnamon
1 Tbsp. lemon juice
