Gluten-free Bread Pudding with Vanilla Sauce and Orange Mascarpone Whipped Cream

Before we went gluten-free, my family loved bread pudding. We made it for different events, but then we stopped eating bread and *poof* there went bread pudding. Over the past few years, we've experimented with making a gluten-free bread pudding and we have finally done it!

Bread Pudding
6 beaten eggs
2-1/4 cups milk*
1/2 cup sugar
1 tablespoon vanilla
1 teaspoon finely shredded orange peel (optional)
1/2 teaspoon ground cinnamon
2 Udi's Baguettes, chopped into cubes (about 4-5 cups of bread cubes)
1/3 cup craisins (optional) (we've used raisins in the past and they taste okay)

Vanilla Sauce
1/3 cup sugar
1 tablespoon cornstarch
1 cup warm water
2 tablespoons butter
2 teaspoons vanilla extract
dash of salt


Orange Mascarpone Whipped Cream
1/2 cup mascarpone cheese, room temperature (you can substitute cream cheese, although mascarpone is lighter and tastier)
2 tablespoons freshly squeezed orange juice
1/2 cup whipping cream
1 tablespoon powdered sugar
zest of one orange
