Gluten Free Chicken Cauliflower Alfredo Spaghetti

1 head of cauliflower
6 cups chicken broth (gluten free)
4 T butter
1/2 cup half and half
3 chicken breasts
1 T soy sauce (gluten free)
1/2 tsp garlic salt
1/2 tsp nutmeg
3 handfuls baby spinach
Brown rice spaghetti noodles
Cook cauliflower with broth in a large saucepan. When tender transfer cauliflower to blender and puree. Depending on how thick you want your alfredo sauce is how much broth you blend in.In a medium saucepan melt butter. Add blended alfredo sauce. Add half and half, soy sauce, garlic salt and nutmeg into mixture. Let sauce continue to cook on low. Cook chicken into cubes in a sauce pan. Once cooked add chicken to white sauce and add spinach. Serve over brown rice noodles.
