Gluten Free Moist Banana Bread Muffins

These are very moist muffins with a little kick of coconut. The flavors work well together and they are not as crumbly as many other gf baked goods. Serves 12.

3 or more bananas (mashed)
3/4 cup sugar
1/4 cup oil or butter (melted)
1 tsp baking soda
½ tsp salt
2 eggs
1½ cup flour (3/4 cup oat flour, 1/4 millet flour, 1/2 cup gf all-purpose flour)
3/4 tsp. xanthan gum
*Brown sugar, if desired.
1 tsp. vanilla
Combine sugar, butter, baking soda, salt, eggs and vanilla; add flour, xanthan gum, and banana alternating between the two until mixed. (do not over mix) Add the coconut. Grease a muffin tin and fill 3/4...
