2 - 3 ripe bananas, mashed
1/4 C pure maple syrup
2 egg whites
1/4 C Unsweetened Applesauce
1/2 C Lite Coconut Milk
1/2 C Peanut Butter (natural creamy is what I used)
1 C Almond Flour
1 C Quinoa Flour
1/4 C Quinoa Flakes
1/4 C stevia
tsp baking powder
1/2 tsp baking soda
tsp cinnamon
1/2 C crushed walnuts
1/4 C pure maple syrup
2 egg whites
1/4 C Unsweetened Applesauce
1/2 C Lite Coconut Milk
1/2 C Peanut Butter (natural creamy is what I used)

Preheat oven to 400 degrees and line a muffin pan with nonstick oil.
Mash bananas in a bowl, combine with maple syrup and egg whites. Add coconut milk, apple sauce and peanut butter and mix well.
