Gluten Free Pumpkin Chocolate Chip Bread

A favorite fall treat!

3 c flour
1 tsp salt
1 tsp baking powder
1 tsp cinnamon
1 tsp soda
2 tsp xanthan gum
1 c sugar
1 c brown sugar
3 eggs
1 c oil
2 tsp vanilla
3/4 cup chocolate chips
Mix flour, salt, baking powder, cinnamon, soda and xanthan gum in a bowl. In another bowl combine both sugars, eggs, oil and vanilla. Mix well and add pumpkin. Add flour mixture to wet mixture and mix until combined. Add chocolate chips. Mix well. Pour into well greased mini loaf pans. Bake 50 mins at 350.
