Gluten Free Pumpkin Muffins

These are perfect for the fall season when everything gets pumpkinfied! Light and flavorful, you won't even know these are gluten free!

1 1/2 cups all purpose gluten free flour
2 tsp. Xantham gum
2 tsp. Baking powder
1 tsp. Baking soda
2 tsp. Cinnamon
1/2 tsp. Nutmeg
1/4 tsp. Cloves
1 tsp. Ginger
1/2 cup butter, melted
1/2 cup pumpkin
2 tsp. Vanilla
2 eggs
1/2 cup milk
1/2 cup chocolate chips(optional)
Preheat oven to 350°F In a medium bowl , mix together dry ingredients. Set aside. In a separate bowl, mix together remaining ingredients except chocolate chips. Add dry ingredients and mix thoroughly. Mix in the chocolate chips and bake 15-20 minutes or until, toothpick inserted into the center comes out clean.
