Gluten Free Quinoa Stuffed Peppers

4 large green peppers
1 cup quinoa
1/8 tsp garlic powder
1/2 can black beans
1/2 cup spaghetti sauce
1/4 cup cheese
Heat oven to 350. Cut stem from each pepper and remove seeds. Cook in boiled water for 5 minutes. Drain. Cook quinoa. Stir in garlic powder. Stuff peppers with black beans on bottom, quinoa, spaghetti sauce on top sprinkled with cheese. Stand peppers upright in an ungreased baking dish. Cover and bake 45 mins. Uncovered, bake 15 minutes longer.
